An, overall, very enjoyable experience!
Turn off PhysX. There's (micro)stuttering with PhysX turned on. FPS aren't low, even on my old system, just some (micro)stuttering.
Two or three times the game crashed. I'm not sure if it was because of Proton and Linux or because of the game itself, I read that it also has some problems on Windows.
When the battery of my DualShock4 Controller went empty during gameplay and the controller shut down the game stopped working. I could still hear the sound, but the game didn't respond anymore. Had to restart my system but after that I was able to play without problems.
I played the version I got for free from Amazon Prime Gaming some time ago. I used Lutris to install it and then chose Lutris' "add to Steam" option. Never had any problems with the game and completely finished it.
Finished the main game, still playing through the DLC story. No problems so far.

45Hz refresh rate and capped frames at 45fps.
Mixture of medium/low graphics settings with only textures on ultra. 40Hz/40FPS cap.
The games works without flaws so far, even touch input works and makes the game so much easier.
Native Linux version didn't work for me. There's always been an error due to a missing Java version, even if installed. Forced Proton 7.0-5 to use the Windows version and had no problems from then on.
Played the whole game in couch co-op together with my girlfriend. We used a DS4 and a DualSense controller. No problems. Game even showed Playstation buttons.
I chose the Windows version with Proton over the native one, because often the Windows versions of games do run better and are more up to date.
The game sometimes crashed when waking the Deck from sleep mode.
Played through the hole main story with no other problems than the ones being mentioned above.
The game only worked for me when I used GE-Proton7-43 AND installed to the internal storage. When I installed it on my SD card it didn't work, no matter which Proton version I chose. After doing so there have not been any problems and not a single crash.
Set the refresh rate to 45Hz and used the game's own v-sync to limit frames to 45fps.
With Proton Experimental I never had any problems. Game takes a bit longer to start and the EA App window is completely blank and grey, but the game itself ran fine.
For me the game ran with stable 45FPS and no audio problems or crashes. Enabled the FPS counter in various worlds and it hast just been stable. Just be sure to use Proton Experimental from the beginning when first starting the game after installing it.
The game has a native Linux version. I just prefer to play the windows versions via Proton because sometimes those are more up-to-date. Native version started without problems though.

The first few start ups sometimes showed a black screen with only audio playing. Alt-tabbing out and in again solved the problem.

In some places (I remember The Thorny Hedge Maze) I couldn't get stable 60FPS with highest settings. There have been drops down to around 50FPS. When I set the refresh rate to 45HZ and enabled v-sync in the game's options I got stable 45FPS.
Sometimes crackling occured after resuming the game when the Deck has been asleep. After a short period the crackling was gone.
Switching to Proton 6.3.-8 fixed the problem with no controllers being detected and my DualShock 4 worked as it should.
"Launching straight from Steam, would a typical gamer enjoy playing this game on Linux even without tinkering?" Well, depends on which controller the person uses I guess. I still tend to say yes, since it supports mouse and keyboard.
