In desktop mode, launch window was non-interactible. Must launch in Gaming Mode on Deck.
Cannot launch with default Proton.
Under Proton 3.7-8 Beta, the game would not even get far enough along to generate its own crash log. A stack overflow in ~/steam-755800.log was the closest thing to an error message that I could get.
Appears to run flawlessly, exhibiting no issues related to platform compatibility (so far, only UI bugs that also exist on the mobile version). Forcing the use of Wine D3D was all that was necessary to get this game running at ~60 FPS even on Intel integrated graphics.
Starts and runs, but shading is borked. River cards have black faces, so the actual poker part of the game is unplayable. Impossible to bet if you don't know what you have.
Adobe Air installation (first-run setup step 1 of 1) sits there, doing nothing. Cannot be canceled, but does not finish. A second attempt had to be force-quit by GNOME.
Game might run once installed, but the installation step does not work.

As others have said. I suck at this game even more with a controller than I did with keyboard and mouse on PC, but it does run quite well on Deck.
I have the Deck's refresh rate and frame limiter both set to 40.
Using standard Proton, as of mid-January 2023, cutscenes do not work, which hampers the game's story. Installing Proton-GE is required to make them display.
