I run my own dedicated server with people I trust and disabled BattlEye as I read it gives issues. But to be fair, I have not even tried playing with BattlEye enabled.
I use Proton 5.0-10 as newer versions kept crashing after a while (memory issues?).
After closing the launcher, it keeps on running for ~20 seconds. Not really an issue, I just made a habit of closing the launcher when starting the game so I don't have to "bother" later. But I have had no issues keeping the launcher open in the background while playing the game.

I have been playing with 2 friends, which both run Windows. I have read somewhere that the Linux should be hosting the game (otherwise lag or something), so this is how we have played the game. I have not tested connecting to a Windows hosted game.
Had quite some FPS drop, but after disabling "Scale Nameplates with Distance" it was gone!
Suggestions below didn't work, my wine must be outdated.
Somebody below also suggested not to use the launcher. I therefore did the following:
cd ~/.steam/steam/steamapps/common/The\ Sims\ 3/Game/Bin
mv -n Sims3Launcher.exe Sims3Launcher.exe.bak
ln -s TS3W.exe Sims3Launcher.exe
Hit play and it works!
Didn't bother any further with the winetricks.
