Later in the game, there was something that was causing my system to drop to what felt like less than one frame per second and the mouse would lag behind. Luckily, this never happened during a timed platforming puzzle or combat. I did not determine what this was.
I had a good time with the game. As stated above, I only had these massive frame rate drops three or four times.
The demo for the game ran without any tinkering on my end. The game appears to be of the same quality of others I have seen play the game on windows.

No online issues that were from my end.
I bought the game from Square rather throught Steam. I used Lutris to download and install the game. Lutris offers two install options: Offical and XIVLauncher, I tried the Offical version and had various issues installing the game and could never get it to start. I then tried the XIVLauncher version and found it to work perfectly.
Minor graphical issues that I don't recall seeing on friend's streams who use windows.
I had bought the game through GoG and installed it with Lutris. It ran very slowly about 10 fps, and had signficant but hilarious graphical issues. Rather than trying to tinker, I loaded the game through Steam as a Non-Steam game and it appears to work fine.
Feels the same on Linux as it does Windows.
Sometimes I had issues connecting to a friend's game but I'm uncertain if its a Linux thing since my friends on Windows would experince it too.
Only issues I have had are the same ones as I did on Windows and that my friends on Windows report.
I have been able to host games and join other people's games for hours.
I have had a couple crashes when deleting buildings, but it might be a bug of the game rather than an issue with running it on linux.
In the ironic words of Todd: "It just works." I do expect the normal level of bugs and whatnot that come from any Bethesda release.
