Trick found on Reddit:
Edit the /home/deck/Games/Heroic/FallGuys/FallGuys_client.ini
file and change the following line:
TargetApplicationPath=FallGuys_client_game.exe
Then, copy the file /home/deck/Games/Heroic/FallGuys/EasyAntiCheat/easyanticheat_x64.so
to /home/deck/Games/Heroic/FallGuys/FallGuys_client_game_Data/Plugins/x86_64/easyanticheat_x64.so
Doesn't start with default Proton, you need to use a custom version. The game crashes when you leave, but it's not a big deal because the save is done in real time. Just make sure your settings haven't gone away if you just changed them.

Works nearly perfectly
When switching to another window and coming back to the game, the FPS get very laggy (from usually > 60 fps to < 20 fps). Need to restart the game to fix the issue.
The game has some performance issues, more imputable to the poor game optimization than to Proton itself, since they also happen on Windows.
Game does not start since the last update. Game shows a black screen and has no sound.
Tried to downgrade the version of Proton, but since then Origin does not seem to install anymore.
Online play is broken
When you click the button to invite a friend, a blank window shows up. Since this game is designed to be played in co-op only, then such a bug makes it completely unplayable.
App starts only through command line, but doesn't detect SteamVR nor headset
Tried to run it with the following command (sudo is needed, because the app normally asks for admin rights on Windows):
sudo "$USER/.local/share/Steam/steamapps/common/Proton 7.0/dist/bin/wine64" "$USER/.local/share/Steam/steamapps/common/PicoLink/Pico Link.exe"
If run with Steam directly, the app's window does not open.
Works out of the box with great performance
60+ fps with all graphics settings set to Ultra. It just works and is beautiful.
Have to force the last Proton version (Experimental not needed, just select the last stable version), otherwise Steam greys the "start" button out and says it is compatible with Windows and macOS only.
On desktop mode, seems to be completely playable, with performance which seem to be sometimes even better than on native Windows.
The window needs to be maximized before entering in full screen mode (otherwise, the game keeps the same size)
Got a maximum of 90 fps, but this value depends on the world and the other people's avatars too. Nothing related to Proton itself.
Will update my review as soon as possible after some hours on VR mode.
Displays only EAC splash screen, VRChat does not show up
Sometimes, the game seems to start correctly (maybe only the first time after OS startup?), but most of the time, nothing more than EAC splash.
