No respose from my controller or keyboard when first loaded game. To get it to work, I had to go to game Properties->Controller and overrisde the default setting to Disable Steam Input. That got everything working.

I also forced 16:10 aspect ratio by installing this mod from GitHub: https://github.com/Lyall/Octopath2Fix
Keep in mind that some UI is not properly set up to work well for 16:10. Most noticeably, you will experience the black overlays not filling up the screen, which I was getting used to after some time.
You may set the frame rate to something between below 60 to save battery or have more consistency. E.g., 45, 40 or 30 FPS are great options. But I tend to leave it at 60 as it works fine.
For Fedora, after launching the game, kill DXSETUP.exe. Then relaunch the game. It will work.

Just to add another record. To Fedora / nVidia users: I cleared my download cache, then the game is able to be launched. Vulkan shader will be computed immediately.
Clear Download Cache is required for Fedora/nVidia user.

What actually makes it work for me is clearing the download cache, and it needs to be done after everytime. Otherwise never truly launches despite 'running' status.

Proton Hotfix
Worked by selecting 'Proton Hotfix', but otherwise was stuck with 'running' but never actually opened.

Full playthrough with no major issues
I experienced a few major FPS drops that lasted a few seconds. They were rare and brief enough that it was never a major issue though.
Used max graphics settings with 120 FPS cap the entire time. I rarely, if ever, saw it actually reach the FPS cap with these settings. It was usually running closer to 90-100 FPS.

Previous issue of save file from demo being deleted when switching to full version now seems to be fixed . I successfully transferred my save from demo to full version.

Demo Worked Great
No problems playing the demo whatsoever.

40 Hz, 40 rock solid FPS, 8 Watt TDP, game graphics settings on High, 720p resolution. Plays really smoothly and battery lasts around 3 hours 40 minutes.

Playable out of the box
Plays at a stable 120FPS. No issues using the Switch Pro controller or keyboard controls.
I played the first hour and a half of the game and just wanted to report I havent had any significant problems playing thus far, saving, and loading the game. I plan to do a more full report when I play a fair bit more.

Played and completed the game with no major issues. I had one single crash during a cutscene transition, but that may have been to me having the game open for ~14 hours.
Playing the game in gamescope prevents the game from losing focus, so if you have Steam Input enabled, you can play the game with a controller while the window is unfocused.
Would only boot on one version of Proton, freezes on startup with black screen. Demo ran totally fine.

Switching from windowed mode to fullscreen fix this issue
Without tinkering, I was completely unable to launch the game. I tried every proton and it did not work
When the demo was updated to the main game it deleted my demo save.
Back up your demo save before buying!

Everything worked perfectly as expected, fullscreen, controller support, controller hotplugging, autodetecting button icons, even controller vibration worked and that's broken in basically every game for me.

The demo version of the game is not available for installation.
Steam informs you that the game is not available on the platform (operating system), so it is not possible to test the demo version of the game.
I am also writing this report to inform developers at both Steam and Proton that there are several demo versions of games that cannot run on steam.
