Runs perfectly. No tinkering needed.
No bugs or performance issues. Video and audio working as intended.
Works out of the box.
I didn't need to use any command or change the Proton version. Even the launcher runs well (though you can use --skip-launcher to go directly to the game).
Using Nvidia, it asks for a driver that isn't yet available.
I couldn't get to the main menu. The game starts but soon displays a message about being required to have the Nvidia driver version 560.70, or later.
I've tried the non-proprietary driver but it doesn't get beyond a black screen.
I couldn't find a way to make it work. The game was just released, so I will wait for further updates.

The game crashes constantly. It says the hardware was physically removed or that it needs an update to the latest version.
Works with Proton GE and using a command to make the game think you're using the latest driver.

This is my third report: finally managed to make it work. No more crashes or errors. Very good performance.
- The mentioned command makes The Veilguard think you are using the latest driver. Currently, there is no stable release available for Ubuntu and I wouldn't like to install it directly from Nvidia.
- I've never used Proton GE before (it was never needed). Search for Proton GE on Github (not the website, it's not "official") and follow the installation instruction. It's very easy: just download the archive and extract it.
Should run by default, but wouldn't launch. Forced a Steam Play compatiblity tool (Proton) and it worked.

Fullscreen worked only using Protob 8.0.5 and PROTON_USE_WINED3D=1 %command%
The game freezes sometimes, but it works again right away.
It works well with Proton Experimental in windowed mode. Need some tinkering only for fullscreen. I couldn't solve the small freezes, but it's rare and didn't bother me. Someone trying to make a run without dying once might find it disturbing.
Escaping from fullscreen leaves the game with a black screen. It's possible to come back by trying to close the window (game will ask for confirmation, and the screen will return to normal).
Despite the fullscreen problem, the game runned smoothly with version 7.0-6.

Unrelated to Linux gaming, from my research it happens on Windows too. Without limiting the framte rate to 60 fps (either changing in NVIDIA configuration or adding the command on launch options), the character would be stuck after combat, and I would have to quicksave and quickload in order to move again.
Besides the controller (Xbox One) having to be connected after the game, I didn't experience any issues at all. It runs perfectly.
If the controller is connected before the game starts, it won't work. Starting the game, then connecting the controller does the trick.
