Launch Flags:Disable Esync
After a bit of back-and-forth with various proton versions, this one (5.21-GE-1) works great, no black bars, xbox controller works great, ~80fps at 1080p. I did have to install libnvidia-glvkspirv:i386 at some point but not sure this is what made the difference.
