Used Protontricks to uninstall the default Wine Mono Runtime and replace it with a custom version as specified at https://github.com/redmcg/wine-mono/wiki#with-protontricks
The game ran without any issues on Proton version 5.13-6 after this change.
Humankind Victor OpenDev works perfectly on Proton 6.3-2
The Victor OpenDev runs very well with Proton 6.3-2 and does not require any tweaking to get it working, with pretty much native level performance.

Some occasional flickering textures on environment props.
The game runs well using the GloriousEggroll custom Proton version with the in-game renderer setting set to Vulkan, even on a laptop with integrated graphics.
Some minor texture flickering was occasionally present on some world props, the game running without any other problems.
