Other than the crash on exit, this game is fully-playable using the latest GloriousEggroll builds of proton.
5.9-GE-6-ST GloriousEggroll
Crashed on exit.
According to Steam, I have had this game running in the background of my computer for 36 hours total. Definitely not getting a refund now. :)
So I start the game, and it runs in the background, never showing up. I figure up htop, and start kill -9'ing the Aviary Attorney processes (sort by CPU usage). After killing 3 of them, a window pops up displaying this message:

once you click the window, THE GAME STARTS WORKING.

So this seems to be 3 processes that are destroying the shader test.
Seriously, game works completely fine (no tweaks needed!) after killing 3 of the processes in HTOP. Confirmed this on a second computer to prove I wasn't insane.
Native AND Proton do not work
Game Maker:Studio seems to have a real problem with their linux ports as of late. CSD2 hasn't worked for over a year natively, and proton still doesn't do very well with GM:S.
Dying Light (Native) uses lspci to detect your Graphics Card (at least when running on mesa). Since on most distributions this binary is located in /usr/sbin/ the game can't find it and reports no video memory and crashes. All i did was creating a symlink "ln -s /usr/sbin/lspci /usr/bin/lspci" and the game would start up fine, even without fixing the library dependencies using ldd on the executable.
Under Proton, the game runs once I disable esync, at a much lower framerate than native (obviously). Before I got the game running natively, this is how I would play. Native is a far superior experience. Disable PCSS, chromatic abberation and granularity for better performance in Proton.
Other than the fullscreen issue, game worked fantastically, and is like $2.50 for a great time.
Fullscreen resolution could not be changed until windowed was applied first. Would crash otherwise.
Using protontricks to install xact was required to stop game from crashing at startup while loading xaudio2_4. Saving worked after "unset LC_ALL && %command%" was added to launch options.
Game is on maintenance mode and Online has been Disabled.
When you start the game, it tells you to email support@iceflake.com for a free copy of their newer game that works online. You're supposed to include your steam ID in the email.

Models were jittery - animations seem broken.
Everything worked, including multiplayer, but enemy animations (in single player) were extremely jittery. Attempted disabling all graphical features, and multiple different Proton versions. all had the same issue on my hardware/drivers.
Unlike my system with a Geforce 1050 TI, this game runs at 30fps with Epic settings enabled. If you set the resolution quality to 80% or set all settings down to "High", you get a 60fps experience with onboard graphics in UE4.
I had to run the following command in terminal before SonicCD would run:
WINEPREFIX=~/.steam/steam/steamapps/compatdata/200940/pfx winetricks d3dcompiler_43 d3dx9
After this command was run, Sonic CD started with no problems. Only installing the d3dcompiler_43 package was not enough. d3dx9 might have been overkill, but Sonic CD ran perfectly afterwards. Every level I checked ran without issues.

Just Works (TM).
Disabled Steam Input to make controller work.
Native Version often does not work. Proton version is more reliable.
Edit config.ini to get fullscreen. Benchmark application worked perfectly here.
Didn't have to do any controller configuration in the menu that pops up before the game starts, even though it only listed keyboard mappings. When the game started, the controller worked fine. Game plays at normal speed, and the framerate is acceptable.
