Works out of the box, like native. Controller support with Steam Input is perfect.
Occasionally, minimising then returning to the game would result in a partial full-screen. This issue is also in LAiX2. Can be trivially fixed by changing the game's settings to windowed and then back to fullscreen.
Occaisional lock-ups and crashes. May or may not be a Linux-only issue. Seems to be related to the game's high memory usage.
Runs essentially perfectly after installing the Windows Media Foundation libraries mentioned in the reports below. However, the game unfortunately suffers from rare, but random crashes immediately after a cutscene is finished. Despite this, it is playable from start to finish.
Rockstar Launcher fails to install, resulting in a "unable to locate the rockstar games launcher" error message. I was able to fix this by manually installing the launcher. This is harder to do than it should be because the installer crashes on launch. However, with WINEDEBUG, it's possible. I used this command (credit to someone else on github, make sure to edit it to match your setup): WINEDEBUG=+heap protontricks -c 'wine Z:/mnt/Storage/SteamLinux/steamapps/common/Grand\ Theft\ Auto\ V/Installers/Rockstar-Games-Launcher.exe Rockstar-Games-Launcher.exe' 271590
Issues including hangs that may last over a minute, as well as some lag from time to time. But outside of that, the framerate is surprisingly good for my setup.
Fonts are missing and will be represented as empty squares, although it's very easy to fix - install allfonts via winetricks (I also installed corefonts although I don't think that was necessary). Additionally, controller support is iffy, the best workaround is to disable the d-pad and left stick and remap them to keyboard arrow keys using Steam Input. Once you do that, the game runs absolutely flawlessly.
Stuck on black screen after going through initial setup and seeing the developer logo.
Missing 3D models; reducing quality also causes weird artifacts
Cutscenes will play after following the guide posted in the other reviews (you do not need to manually download the service pack, mf_installcab does that automatically)
Dualshock 4 buggy mapping (D-pad not working, face buttons inverted, right stick axes swapped, vibration not working). Works perfectly fine after enabling Steam Input.
After doing the aforementioned fixes, the game runs like native. I am currently on chapter 3 and have yet to notice anything that could be perceived as a problem.

I forgot to mention the most important detail in my previous review which is that the mf_installcab will fail on an old version of Wine. The *buntu 20.04 version (5.0) is too old. Even the "stable" version (6.0.2) is too old and will fail. You have to manually setup the "development" repository unless you have a rolling release distro.
