Remove (if it already exists) the 244210 folder in steamapps/compatdata. After that set proton version to 5.0-10 and press play (it will fail to launch).
Go in steamapps/compatdata/244210/pfx and run winecfg to change the Windows version to XP.
Now run protontricks 244210 dotnet472 - it will take a while, you just need to have patience and click next/continue a bunch of times.
After it's done, still in the same folder, change the Windows version to 7 with winecfg. Run the game on Proton 5.0-10 once again.
You might get a DLL error on startup, just ignore it. You can now change the version of proton to a preferred one, I changed mine to GloriousEggroll's Proton-6.14-GE-2.

I was not able to get force feedback to work with the Logitech G29. Neither the native version or windows version weren't able to provide ffb to the wheel.
The game is very playable if you only do the story, but you might experience issues in GTA: Online.
From the suggestions found here I ended up with the following launch arguments:
WINEESYNC=0 PROTON_NO_ESYNC=1 WINEDLLOVERRIDES=dxgi=n,b PULSE_LATENCY_MSEC=60 PROTON_NO_FSYNC=1 PROTON_NO_XIM=1 PROTON_ENABLE_NVAPI=1 PROTON_USE_SECCOMP=1 gamemoderun %command% -adapter 1 -vulkan -USEALLAVAILABLECORES -cpuLoadRebalancing -ignorepipelinecache
I won't even suggest that I know what all of these args do, but the performance is slightly better with them than without.
On story mode I get over 100 fps at Ultra settings, but online I'm getting only close to 60 fps. I also had some issues with Rockstar Social Club, not being able to connect to their servers.
I was sometimes not being able to connect to R* Social Club, so buying ammo, snacks etc. was not possible.
Online mode only
I used the Logitech G29 wheel, input and force feedback is good. You have to set it to PS3 mode.

I used GloriousEggroll's version of Proton (6.10-GE-1)
Switch to OpenGL if you experience crashes.
