I played this for many hours without an issue.
Sometimes I have the "server disconnect" more than I had with Win10. Perhaps a coincidence or maybe traffic is getting stuffed ?

Steam / Rockstar support of Win7/8 is retired so you need to use protontricks ; it'll see your setup and you can override to Win10

I was surprised it just worked. My steam install is using deb on Pop OS not a flatpak as I had issues with access to other internal drive.
I've only played a few random levels (inc. Paris for 1hr). If I play longer I'll update if anything else occurs.
