Once you set up everything the game runs almost flawlessly, the only problem I encountered is that textboxs seem to are a little off center.
Open winetricks pointing to the bottle wine path: WINEPREFIX=/path/to/bottle winetricks. Then install the "allfont" package from the font install section.
If the sound doesn't work just restart the game.
The game goes fullscreen only using Soda9.0-1, using other runner like GEProton doesn't seem to work for fullscreen.
The game is not capable of auto-installing the necessary fonts, that's the only reason it needs tinkering.
It's possible to do all of this without bottles, using only the Steam runner, but i prefer to use bottles for tinkering so i only tested on it.
Running the game using Steam right away will not work because the in game text will not be displayed, you still need to install the fonts.
P.S.: even if you installed the fonts the game will always ask to install the fonts at the start, just ignore it.
