This game requires a specific version of PhysX (9.10.0513) that you can download directly from the Nvidia website and install through the protontricks GUI (couldn't get it to work via CLI). Once you install this PhysX package and add the launch option string, the game will launch. Using "proton-ge-custom" there are no audio or video artefacts like crackling - it runs as smoothly as it did when it was first released.
Every so often, with no indication that it's coming from monitoring resources, the game will crash and a Wine dialog box will pop up with the message: "Out of memory space. Texture quality settings may be too high." (Not the card; the game ran flawlessly at max settings on another OS.)
Game would only run with Proton Experimental - would not load with the 3 other versions I tried.

Shadows are not completely smooth compared to Windows
Controller took over input, had to disable Interface >> Controller Hotswap
Dual-monitor setup, switched both monitors to same refresh rate
Had Starfield on Windows 10 prior to switching to Garuda Linux. Performance is just slightly lower, but after working on multi-monitor refresh rates and disabling controller hotswap, game is running very nicely with minimal tweaks.
